"Qu'ils mangent de la brioche!" Quintessentially French, Brioche is a leavened viennoiserie, in that it is made in the same basic way as bread, but has the richer aspect of a pastry because of the extra addition of eggs, butter, and milk. It is often baked with fruit or chocolate chips and served on its own, or as a base for dessert with the addition of ingredients, fillings, and toppings.

Sucre Grain or Pearl Sugar are bright white, irregular chunks of sugar that won't melt or burn atop baked bread or confection, such as Brioche and Chouquettes.
